About Frea...

A Chef.

A Creator.

A Mum.

My journey with food has made me work harder than I ever have in my life.

I live to travel, eat, and love.

When we had our Good Food Guide award winning restaurant, Fusion7, here in Port Macquarie I made these carefully thought out desserts with 6 to 8 components and I loved it, but I started drooling over my Gourmet Traveller magazines and tearing out pages and squirrelling them away to make ONE day.  I had these cravings of ‘just baking’, so that’s where the Sugar Mummah journey began!

Growing up I was always drawn to sweets, sugar to be more specific, to the point where I would cut up a crisp green apple and sprinkle raw sugar on top (if you have never tried this you haven't lived!). So my love of sweets grew but I wanted more.

I grew up in the beautiful beach town of Port Macquarie.

As soon as I finished school I was off to Sydney to study acting and become what I swore I would never be.... a waitress.

My career in Hospitality started and I was hooked! Eventually after managing a restaurant in Balmain, l quit acting and put all my time into learning everything I could about owning a restaurant. Then when I wanted even more, I spent two years living in London (discovering my roots) and working as a barista in a local cafe.

Through all this my head was always in the kitchen. It intrigued me! The pace, the energy and most of all, the art of it all!

So jump forward after 12 years of living away I moved back to my hometown to work out how I could put everything I had learnt together.

I started working at Fusion7 here in Port Macquarie, which was included in the Good Food Guide six years running. As well as finding my love of food there, I also found love of another kind - the owner! We’ve been together ever since.

He was stuck for a chef, I offered to help and 2 weeks later I felt like I had finally found my home, everything fell into place, there was a calm inside me that I had never known existed. So at 29 I did my chef's apprenticeship and I have never looked back. After 10 years of having the restaurant and carefully planning desserts that had sometimes 10 components I wanted to go back to the beginning when a simple cake or a cookie could bring so much joy. And is available to everyone, not just people lucky enough to be dining in a restaurant!

“Put simply I wanted to BAKE! ”

My path kind of grew in front of me... my partner and I had a little boy, Henry, and now everything reminds me of the simple pleasures in life.

I wanted people to be reminded of when they were a kid and eating a cookie was sometimes the BEST part of your day.

It was actually Lindsey and Henry that came up with the name ‘Sugar Mummah’, we were joking about how I don't make raw, sugar free treats and Linds commented that I was more like a sugar mumma!

Then Henry piped up and said Dad! You mean a Sugar Mumm-AH! He has always called me Mummah (still does!) and I love it! It makes me feel like I'm living the life of a french pastry chef mummah.

I love that they brought both of the worlds I love together.

So! Put simply, food is my life and it gives me great joy, it makes me smile, it makes me cry when people don't respect it, and it makes me laugh with pure happiness.

This journey of food has made me work harder than I ever had in my life.

I work to travel, eat, and love.

If I can bring a little piece of my joy into every cookie/sweet I make and make people smile.. My job is done.
